Helianthus tuberosus – Jerusalem Artichoke – 1-Gallon

Not an artichoke, and not from Jerusalem, this is a native sunflower that is grown primarily for its edible tubers with a sweet, nutty flavor. Best production occurs in your vegetable garden but be careful about placement because plants spread quickly and aggressively. In the species (‘Sunchoke’) the tubers are quite knobby and not so easy to clean. There are two cultivars we offer that are smooth with no knobs, ‘White Fuseau’ and ‘Red Rover’ which has red tubers that turn white when cooked. Tubers average 1” in diameter and up to 6” long. Harvest in October.
