‘Stayman’ is a seedling of Winesap raised in 1866 by Dr. J. Stayman of Kansas. The subacid flavor is distinctive because of its rich, tart and wine-like qualities. Very good for fresh eating, great for baking and applesauce and superb for adding tartness to cider – a good keeper to boot. ‘Stayman’ is a triploid apple that requires a pollenizer and is a poor pollenizer for other varieties. The moderately vigorous tree bears early and heavily. A late ripener – in our area from mid- to late October.
